Monster cookie time

Yummy! These are some of our favorite cookies to make at Christmas time. Not only does this recipe make a huge amount of cookies,it's easy,they freeze well and are also great for giving away. I have memories of making these with my Nana, siblings, and cousins every year while growing up. It's a great recipe to make with kids, as you will need helpers for stirring. I'm not sure why they're called 'monster', other than their size, plus they have nearly every conceivable cookie ingredient possible! This recipe is easily halved or cut down even farther if you don't want so many (but I can't imagine why you wouldn't). And yes, it's a pound of butter--go for it, it's Christmas! Monster Cookies (makes 8 dozen)

12 eggs

2 lbs. brown sugar

4 c. white sugar

1 T. vanilla

1 T. light corn syrup

8 tsp. baking soda

1 lb. butter, melted

3 lbs. peanut butter

1 lb. chocolate chips

1 lb. M&Ms

18 c. oatmeal

Mix the eggs, sugars, vanilla, corn syrup, baking soda, PB, and butter with a mixer. Dump into a BIG pan, and add choc. chips, M&Ms, and oatmeal by hand. (this is where you take turns mixing!)

Use a 1/4 c. scoop to form cookies, bake on greased or nonstick cookie sheet at 350 degrees for 10-12 minutes. Don't overbake!
